2016 Blind Corner Chenin Blanc
Light, fresh and sweet - you might think we're describing nanna's homemade soufflé, but this little gem is a handmade Chenin Blanc.
Made from a single block of Chenin on the East side of the Quindalup vineyard, the majority of the wine is wild fermented in stainless steel with no acid additions. The balance consists of a small portion that is hand-picked and locked up for 10 days at 5-7 degrees Celcius for 'Carbonic Maceration', which is a special kind of fermentation.
Once blended back into the main yield, it adds some palate weight and texture without taking away from the crisp nature of the wine.
Take some over for the next visit to your nan, but know that she won't let you take any home.
